Harvest period: First/third week of September

Winding: The grapes are harvested manually in crates, maceration lasts 10-12 days with regular pumping over. After alcoholic fermentation and racking, the wine rests in stainless steel containers where malolactic fermentation takes place. Aged in French-American oak barriques for 4-6 months

Organoleptic characteristics: Very deep and elegant ruby ​​red color, broad and complex aroma, fruity with hints of plums, cherry jam and notes of tobacco, slightly spicy. Full-bodied wine, soft and rich in noble tannins, with a finish that offers notes of cocoa, coffee and vanilla

Pairings: Traditional recipes from Puglia, meats seasoned with sauces, roasts and aged cheeses
