Winding: The grapes are harvested manually in crates, maceration lasts 10-12 days with regular pumping over. After alcoholic fermentation and racking, the wine rests in stainless steel containers where malolactic fermentation takes place. Aged in second and third passage French-American oak barriques for 6-8 months.
Organoleptic characteristics: Colore rosso rubino, all’olfatto il profumo rimanda alle ciliegie mature e alla prugna con gradevoli note di cacao e vaniglia. Vino di elevata struttura e morbidezza
Pairings: Hearty first courses, lamb, roasts, game with sauces and hard cheeses

In Carosino, a town in the province of Taranto, the Fontana del Vino one of the main historical monuments. In front of the Palazzo Ducale and located in the center of the quadrangular square.
The ornamental fountain, commonly known as the “Fontana del Vino”was inaugurated in December 1894.
The aforementioned fountain, soon recognized by most as the Fountain from which wine flows, soon became an element of identity of Carosino.
A key symbol of the famous end-of-summer initiative of the Sagra del Vino, the Fontana has allowed, uninterruptedly since the first half of the 1960s, the Primitivo wine to flow from its taps, temporarily replacing the normal flow of water.
Hence the name Zampillato
